The Winery at Eagles Trace

Eagles Trace CaveWe put our first cave into our hillside in 1986 with a much larger cave in 2002. When I decided to found Eagles Trace I made the decision to put the new winery in the old cave for numerous reasons that had to do with my evolving ideas for making great wine.
Caves have always been the ideal place to store wine. The constant temperature and humidity are very important factors in wine storage. Our cave maintains a constant temperature of 60 to 62 degrees year around. The humidity of 80 to 85% reduces the evaporation loss and the only expense is for electricity for lighting. Keeping it Cool
